Color measurement of vegetable edible oils and edible fats

Vegetable edible fats and oils consist of fatty acids, are practically anhydrous and are liquid, solid or semi-solid. They come from seeds, germs or fruits of plants, including the popular sunflower oil, linseed oil, rapeseed oil, olive oil and the solid coconut oil. Different variations and mixtures make instrumental color measurement indispensable for maintaining quality and freshness.

In contrast to solid “blocks” of margarine and shortening, which are determined using a reflectance meter on which the sample is placed directly, oils are filled into cuvettes and measured in a transmission device.

Instrumental color measurement of hardened vegetable fat

The task The consistency of margarine does not allow it to be simply placed on an aperture for color measurement, as this would contaminate the sensitive measuring device. For this reason, it is often laboriously coated in measuring cuvettes for color measurement, which have to be laboriously cleaned again after the measurement.
